It is not a coincidence that, in the past, grappa was called ”aquavit”, from the Latin term aqua vitae, which means “water of life” or “water bringing life”. Alcohol, indeed, perfectly preserves all organic elements, preventing any degradation. For this reason, grappa has always been used as a way of ”storing” small fruits such as cherries, plums or grapes. The grappa obtained from this process can be characterised by its special colour and aroma.
This old and popular tradition, common in our family, is at the heart of our new collection of grappa infusions. To produce our infusions, the starting point is a distillate, instead of alcohol, offering a very different bouquet of flavours from those of traditional spirits.
Pagura infusions do not contain any chemical colourings or additives. Our infusions are solely made from high-quality Friulian grappa infused with small fruits, leaves and seeds, often following the recipes handed down by our family. This process is still possible because we made the decision to keep our distillery deeply rooted in local traditions.
If you come to our distillery, you will still see the demi-johns filled with precious grappa, stored in the sunlight or in the shade, according to the type of infusion that is being sought after.
